These banana oat muffins are slightly adapted from Bob’s Red Mill Banana Oat muffins. This recipe can be adapted to include apples, zucchini, and even carrots instead of bananas, and they are gluten free too!

Banana Oat Muffins

Ingredients:

  • 2 cups oat flour
  • 1/2 cup rolled oats
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup mashed bananas
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 cup yogurt
  • 1/3 cup oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tablespoon chia seeds soaked in 3 tsp. water for 10 minutes (optional/you can more if desired)
  • 1/2 to 1 cup chopped walnuts (optional)
  • 1 to 2 cups dark chocolate chips/wafers
Directions:
  1. Mash bananas in large bowl with a masher.
  2. Add sugars, yogurt, oil, eggs, vanilla, and chia seeds, mix well.
  3. In a separate bowl, mix oat flour, oats, baking powder, baking soda, and salt.
  4. Stir flour mixture into banana mixture until well combined.
  5. Stir in walnuts and chocolate.
  6. Scoop into muffin tins lined with paper liners.
  7. Bake at 400 degrees for 18-20 minutes, rotating the pan half way through baking time. Bake until toothpick comes out clean. Don’t overbake.
